I always have the same side dishes with my dinners: rice, mashed and fried potatoes. After many years of becoming bored with having the same side dishes, I started to think of alternatives. This is my new favorite.
Recipe:
6 medium size white potatoes (red would also be good, I only had white in my house yesterday thought)
2.5-3 tablespoons olive oil (enough to fully coat the potatoes)
2 cloves garlic chopped
1/2 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon kosher salt
3/4 teaspoon dried thyme
3 teaspoons fresh parsley
1 teaspoon black pepper
1/2 teaspoon red pepper
1/2 teaspoon white pepper
3/4 teaspoon dried dill
Preheat oven to 470 degrees Fahrenheit. Put everything into a large bowl and mix together until the potatoes are evenly coated. Evenly distribute on a pan coated with aluminum foil (to prevent sticking). Cook 25-30 minutes, turning the potatoes halfway through cooking. Garnish with fresh parsley.
